1 lb bacon, chopped
2-3 leeks, chopped & cleaned thoroughly
2 cups brown rice, cooked
2 tablespoon tomato paste
1/2 cup water or low-sodium chicken stock
salt & pepper to taste

Fry bacon in a large skillet until crisp. Remove bacon and stir-fry leeks in 1 tbsp. bacon drippings until tender.  Add rice, tomato paste, stock and salt and pepper to taste.  Simmer 3-5 minutes stirring frequently until stock is absorbed. Stir in bacon.

*You can substitute the bacon with ham or spicy Italian sausage just add 1 tbsp. of oil to saute the leeks. If you don’t have brown rice regular white rice is good too.
