2 tablespoons olive oil, or as needed
1 small onion, diced
2 cloves garlic, minced
1 cup quinoa
2 cups chicken broth
1 tablespoon curry powder, or to taste
1 tablespoon ancho chile powder (used cayenne pepper)
*1/2 cup frozen corn kernels
salt and pepper to taste
1 teaspoon green onion, for garnish
Heat oil in a large skillet over medium heat. Add onion and garlic and cook and stir for 2 minutes; add quinoa and cook and stir until lightly toasted, about 5 minutes.
Pour broth into the pan and bring to a boil. Reduce heat and add curry and chile powders; cover and simmer until tender, about 25 minutes. Add the frozen corn. Season to taste with salt and pepper. Garnish with green onions.
*We have been trying different kind of recipes for quinoa. I felt like eating Indian food, I made Butter Chicken and homemade Quick and Easy Naan Bread for dinner and instead of making rice I decided to make the curried quinoa which I found in All Recipes website. I just added 1/2 cup of frozen corn kernels and top it with green onions for color. Everything was almost authentic I felt like dancing Bollywood 🙂 enJOY!!!
