Caprese Salad


1/2 cup fresh Basil leaves, chopped (used 1/4 c. parsley and 1/2 tbsp. dried basil)
1 clove garlic, minced
half a lemon
1/2 cup Bocconcini (small sized fresh mozzarella cheese balls), drained
1 cup cherry tomatoes
2 tablespoons olive oil
salt and pepper to taste

Squeeze out the lemon juice from 1/2 a piece of lemon in a small bowl. Add minced garlic and olive oil in it and whisk together all ingredients to prepare an olive oil and lemon juice salad dressing.
Combine cherry tomatoes, bocconcini (mozzarella cheese balls) and fresh basil in another bowl.
Add salad dressing over it and season with salt and pepper to taste.

*Simple and fresh salad I always can’t get enough of especially when it is in season. The bocconcini is like small pillows of cheese, and I’m a sucker for cheese. I didn’t have fresh basil so I substitute it with 1/4 cup fresh flat parsley and 1/2 tbsp. dried basil. enJOY!!!
