2 tablespoon butter
4 cloves garlic, minced
1/4 cup onion, minced
1/2 cup fresh/can mushrooms, sliced
1/2 cup cooked quinoa
2 tablespoon green onion, chopped
1 tablespoon fresh parsley, chopped
Kosher salt and pepper to taste
Saute garlic and onion with butter, cook for 2 minutes or until onion is translucent. Add mushrooms cook for 5 minutes, season with salt and pepper. Add cooked quinoa and green onions then garnish with parsley. Serve with your favorite dish.
