1 cup shredded cabbage
1/2 cup carrot, julienne
1/4 cup roasted pepper, julienne
1/4 cup green onion, julienne
1/4 cup cucumber, julienne
1 avocado, cut thinly
Whisk the garlic and vinegar together in a bowl. Season lightly with salt and pepper. Continue whisking the vinegar mixture and drizzle in the oil in a thin steady stream. When the vinaigrette is in the right consistency, toss it with the rest of the ingredients.
*I have been experimenting and making my own vinaigrette for our daily salads. It looks like a lot going on but it does work. Just a touch of sesame oil, sweetness of the rice wine and tanginess of the red wine vinegar. It is definitely worth a try. enJOY!!!
