2 tablespoons butter
2 cloves, minced
1 cup cooked quinoa
1/4 cup edamame
1/4 cup frozen corn
1 egg, cooked scrambled
1 slice Polish ham, cut into strips (optional)
Kosher salt and pepper to taste
2 green onions, thinly sliced
Saute garlic with butter for 2 minutes. Add the rest of the five ingredients, cook for 5 minutes and season with salt and pepper. Garnish with green onions. Serve with your favorite dish.
*We have been replacing rice with quinoa. I have been trying to cook quinoa in many different ways. This is better than fried rice especially with edamame (my kids fave snack)…this one’s a keeper. enJOY!!!
