Kale and Mushroom with Toasted Walnuts


3 tablespoon olive oil
2 cloves garlic, minced
1 shallot, sliced thinly
3 cups kale, chopped
1 cup mushroom, sliced
1/4 cup chicken broth or water
1/8 cup toasted walnuts,chopped
Kosher salt and freshly ground pepper

Saute 2 tablespoon olive oil in meduim heat garlic and onion for 2-3 minutes or until translucent. Add mushrooms, cook it until moisture has evaporated. Set aside.

Cook kale with 1 tablespoon olive oil until it starts to wilt. Add broth or water and stir and cover pan, allowing greens to steam until barely tender. Season with salt and pepper. Add mushrooms and top with toasted walnuts.
