1 pound Barramundi (used Tilapia fillet)
1 red pepper (used roasted red pepper)
1/2 large red onion
1/4 cup kalamata olives, sliced in half
2 tablespoon feta cheese
1 tablespoon olive oil
1 tablespoon butter
2 cloves garlic chopped
Salt and pepper to taste
Slice red pepper lengthwise into strips and chop onion into strips. Heat 1 tablespoon oil in pan over medium heat. Stir in chopped garlic and add peppers and onions. Cook for 12 minutes, or until they reach your desired consistency. Transfer to plate.
Add 1 tablespoon butter and 1 garlic clove to same pan. Once butter has melted add the fish and salt and pepper to taste. Flip after two minutes. Continue to cook for two minutes on opposite side.
Transfer to a plate and top with peppers, onions, olives, and feta.
*The original recipe ask for Barramundi, I didn’t have enough so I substitute with with Tilapia. It worked out great, I paired it Shopaska Salata and Quinoa Sauté of Zucchini with Toasted Almonds. It turned to be a Mediterranean fest. enJOY!!!
