2 tablespoon olive oil
3 garlic cloves, minced
8 dried shitake mushroom, soak in water then thinly sliced
200 grams of pea shoots
1/4 cup chicken stock
2 tablespoon oyster sauce
Kosher salt and freshly ground pepper to taste
Heat the oil in medium heat and add garlic, saute for 2-3 minutes or until it is aromatic. Then add the sliced shitake mushrooms, stir for for 3-5 minutes. Mix in the oyster sauce and chicken broth. Let it simmer for a few minutes. Slowly add the pea shoots take off from heat. Season with salt and pepper.
Serve the pea shoots on a plate top with mushrooms.
*A simple dish but very refreshing plus the earthiness of the mushroom, it’s perfect. Then I thought pea shoots are only for salads or sandwiches. You can use fresh shitake mushrooms or any kind of mushroom would do. enJOY!!!
