1 cup regular quinoa, cooked
1/2 cup red quinoa, cooked
3 cloves garlic, minced
1 tablespoon butter
1/4 cup toasted walnuts
1/4 cup toasted pine nuts
1/4 cup toasted slivered almonds
salt and pepper to taste
thinly sliced green onions, for garnish
Cook quinoa separately. Set aside.
Toast all the nuts for about 3-5 minutes. Stir once in awhile, be careful not to burn it.
Heat butter in medium-high heat add garlic. Cook it until aromatic then add quinoa, walnuts, pine nuts and almonds. Mix well. Season with salt and pepper. Garnish with green onions.
*I went nuts with quinoa 🙂 The nuttiness of the quinoa and the nuts…obviously that’s where the name of the recipe came from. It has different textures and crunch that we love. enJOY!!!
