3 cups tomatoes, diced
1 teaspoon chives
salt and pepper
1 small shallots, minced
1/4 cup red wine vinegar
extra virgin olive oil
For the shallot dressing, add the shallots to the red wine vinegar. Let it stand for 30 minutes or more, the longer the better. Set Aside.
Chopped tomatoes. Add the olive oil to the shallot red wine mixture. Incorporate well. Then add into the tomatoes, season with salt and pepper. Top with chives.
*Tomatoes are like candies for us, it doesn’t stay long in the fridge. We eat with feta or toss it in a salad. I love the meaty texture of the tomatoes. I used tomato in the vine and cherry tomatoes. enJOY!!!
