4 Barramundi fillet
3-4 tablespoon olive oil
sea salt and black pepper
2 garlic cloves
extra salt (for the garlic)
3 tablespoon tahini
4-5 tablespoon water

Place a frying pan with olive oil over high heat.
Season the Barramundi (Cod) fillets with salt and pepper, carefully place the fish in the pan skin side down. Cook for 1-2 minutes and carefully flip over. Cook for another 5-7 minutes depending on the thickness of your fillets. When cooked, the fish should flake easily and be white all the way through.
When the fish is just cooked through, pour the tahini sauce into the pan to warm for about 30 seconds (I cut the heat completely).
Transfer to a plate and spoon sauce over fish. Serve with lemon on the side
For the sauce:
Crush 2 cloves of garlic with a healthy pinch of salt in a mortar and pestle.Transfer the garlic mix to a small bowl and whisk in 3 tablespoons of tahini and the juice of 1 lemon.
Add water (probably between 4 and 5 tablespoons) until you have the consistency of heavy cream. Add sea salt and pepper to taste.
*The original recipe ask for Cod but I substitute it with Barramundi. I think the Tahini Sauce is the star. You can spread this sauce on a toasted bread and it is perfect. Thank you to Blackberries And Blood Oranges for sharing the recipe. enJOY!!!
