4 cups kale, chopped
3 slices bacon
2 cloves garlic
2 cups shitake mushrooms, thinly sliced
2 tablespoon olive oil
1/4 cup chicken broth
Kosher salt and freshly ground pepper
In a large saute pan, over medium heat, cook the bacon until crisp. Remove the bacon and place on a paper towels. Add the garlic and shitake to the bacon drippings and cook over medium heat for 5 minutes. Set aside.
Heat olive oil and add kale and stir occasionally until greens are barely wilted. Add chicken broth and stir and cover pan, allowing kale to steam until barely tender. Season with salt and pepper. Toss in bacon and mushroom. Serve immediately.
*Kale, bacon and mushroom…what could go wrong except one empty bowl in matter of minutes. You can also skip the bacon, shitake mushroom has a meaty texture but it always taste better with bacon…don’t you think? 🙂 enJOY!!!
