1/2 whole Red Onion
1 clove Garlic
1 pint Cherry Or Grape Tomatoes
2 whole Avocados
*1 cup mango, diced
1/2 whole Lemon
1 Tablespoon Olive Oil
*green onions, garnish
Salt And Pepper, to taste
Finely chop the red onion and add to a medium-sized bowl. Mince the garlic and add to the bowl. Then halve the tomatoes and add to the bowl.
Cut the avocados in half and remove the pits. Scoop each half out of the shell and dice. Add the diced avocado to the bowl. Squeeze the lemon half over the top to release its juices. Add mangoes.
Drizzle with olive oil and season with salt and pepper. Gently toss, being careful not to mush up the avocado. Serve immediately or refrigerate, if not serving right away.
*I didn’t have red onion so I just skipped it and added mango and green onion instead. This salad reminds me of summer picnic by the beach, very refreshing and light. Best serve in barbeques also. enJOY!!!
