1 cup Black Japonica cooked according to package directions
1/2 lb package skinless boneless chicken breasts, cute into bite-size pieces
2 tablespoons teriyaki (made my own marinade)
1 tablespoon butter or olive oil
2-4 cups vegetables, cut into bite-size pieces
*toasted sesame seeds for garnish
1 clove garlic, minced
2 tablespoons lite soy sauce
Sprinkle teriyaki over chicken bits. Let it stand for 10 minutes (used soy sauce marinade.
Heat oil in a wok or deep heavy pan on medium-high. Stir fry chicken bits for 5-10 minutes and remove from pan. Stir fry vegetables until tender-crisp. Add rice and continue to stir fry. Add cooked chicken and stir briefly. Garnish toasted sesame seeds.
*I got this Black Japonica Rice from my first Foodie Pen Pal. I’m very delighted that she send it because it’s my first time eating and preparing it. Of all different kinds of rice this has the lowest calorie count. I got the recipe at the back of the package and there is more online in there website. enJOY!!!
