Turkey Zucchini Boats


2 meduim zucchini
1 tablespoon olive oil plus extra
1/2 cup ground turkey
1 small onion, minced
2 cloves garlic, minced
2 tablespoon panko breadcrumbs
Freshly grated Parmesan cheese
Kosher salt and freshly ground pepper

Trim the stem of the zucchini. Cut in lengthwise and using a teaspoon scoop out the flesh/pulp and chop finely. Mix together in a small bowl the panko and Parmesan cheese. Set aside

In a medium-high heat saute onion and garlic until aromatic then add turkey, cook it for about 5 minutes then add chop zucchini pulp. Break any lumps of turkey. Season with salt and pepper.

In a cookie sheet place the zucchini boats at the center, season with salt and pepper and drizzle olive oil. Spoon the meat mixture into the zucchini shells. Top with the panko and cheese mixture. Into the oven at 350F for about 20-25 minutes or until the zucchini is tender.

*Zucchini’s are always prepared with stir fry veggies so I decided to make the  zucchini the star and made pretty little boats. The zucchini boats are party starters. You can cut it in small just enough for a perfect bite. You also add hot sauce on top to give it a little zing. enJOY!!!
