2 (6-ounce) skinless salmon fillets
1/4 cup commercial pesto, divided (used my homemade Kale Red Pepper Pesto)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 (1/2-inch-thick) sweet onion slices
Harvest Grains Blend with toasted almonds (cooked)
green onions for garnish
Brush fish evenly with 2 tablespoons pesto; sprinkle with salt and pepper. Brush 1 tablespoon pesto over onion slices.
Place salmon, onion slices, in cookie sheet coated with cooking spray. Broil 14 minutes or until salmon is desired degree of doneness, onion is tender, turning salmon and onion after 7 minutes. Serve with Harvest Grains Blend with toasted almonds garnish with green onions.
*This one is a perfect meal easily done in minutes. I loved the vidalia onions with pesto. In the original recipe it ask to grill the salmon but it was one of the busy nights and I didn’t have time fire up our charcoal grill. Broil was the way to go and it worked out even better. enJOY!!!
