Sesame Spinach Rolls


1/2 cup water
1 tablespoon plus 1 teaspoon sake
1 teaspoon soy sauce
1 teaspoon rice-wine vinegar
1/4 cup water
1 pounds spinach, tough stems discarded, rinsed well and drained

Mix the ground sesame seed, sake, soy sauce, and vinegar.

Heat the water in a large skillet over medium-high until simmering. Add spinach, cover and steam 2minutes, then toss with tongs and continue cooking (covered) 2 minutes more. Toss again to thoroughly wilt, and transfer spinach to a colander; press with a wooden spoon or flexible spatula to extract as much liquid as possible.

Coarsely chopped spinach, and place in a bowl. Add sesame dressing, tossing to combine well. Divide evenly into four portions, and shape each into a compact log.

*It is a very simple dish and it’s Popeye worthy. Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. enJOY!!!
