Quick Pickled Cucumber Salad


2 large cucumbers, peeled and thinly sliced crosswise
1/2 medium red onion, thinly sliced
*1/4 cup radish, thinly sliced
1 teaspoon sugar
1/4 cup rice vinegar
Coarse salt and ground pepper

In a large bowl, combine cucumbers, red onion, sugar, and rice vinegar. Season with salt and pepper and toss to combine.

*Simple and refreshing dish. We similar pickled salad in the Philippines but we used cane vinegar then add sugar to it. By using rice vinegar, you don’t need to because it is seasoned already and the red pepper gives it a little kick. enJOY!!!
