Mango Salsa

Ingredients:

1 mango, pitted, peeled and diced
1 avocado, peeled, pitted and diced (save pit)
1 tomato, diced
1/4 cup jicama, peeled and diced (used cucumber)
1 jalapeño, seeded and minced
1 small red onion, minced (used shallots)
1/4 cup fresh cilantro, chopped
juice of 1 lime
1-12 tablespoons extra virgin olive oil
sea salt

In a large bowl, combine mango, avocado, tomato, cucumber, jalapeño, onion and cilantro. Fold in lime juice. Add olive oil until desired consistency is reached. Season with sea salt to taste, place pit on top of mixture to keep avocado from turning brown, cover and set aside to allow flavors to blend. Remove pit before serving.

*Mango and avocado are like salt and pepper, always good together. Saving the pit and placing it on top of mixture to keep the avocado from browning is a brilliant tip. I would have never have thought about that…genius! enJOY!!!
