1 tablespoons grated lemon rind
1 tablespoon minced fresh dill or 1 teaspoon dried dill
3 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons olive oil
Combine lemon rind and the next 4 ingredients (through pepper) in a medium bowl, stirring with a whisk .Slowly add olive oil in a thin stream, stirring constantly with a whisk until combined.
*Making your own dressing is the only way to go, at least you know what you are putting into it. You can double or triple the ingredients keep in the fridge ready to use. eNJOY!!!
