Seeds from 1 large pumpkin, rinsed and dried
2 tablespoons olive oil
Salt and freshly ground black pepper
Scatter pumpkin seeds onto a sheet pan in a single layer and drizzle with olive oil. Sprinkle with salt and pepper and toss to coat. Bake for about 7 minutes, until light brown and crispy.
*After the roasting, pureeing, and baking, the question what to do with the seeds?! Waste not want not…of course want to. Roasted pumpkin seeds are good for snacking the problem is when to stop. enJOY!!!
