2 cups diced fresh pineapple
1 large firm-ripe mango, peeled, pitted and diced (1 1/2-2 cups)
1 red bell pepper, finely diced
1/2 cup chopped cilantro
1/4 cup finely choppped red onion
2 tablespoons freshly squeezed lime juice, or more to taste
1 teaspoon fine salt, or 2 teaspoons kosher salt
1 fresh habanero chile, finely chopped, including seeds (used jalapeño peppers)
Mix all ingredients except the habanero together in a large bowl. Add 1/2 teaspoon of the chopped habanero, and then add more to taste, remembering that the more heat the better here. Season to taste with additional lime juice and salt.
