Lemon-Macerated Okra and Olives

Lemon-Macerated Okra and Olives


3 cups small okra pods
1/2 cup kalamata olives
1 tablespoon grated lemon rind
1/4 cup fresh lemon juice
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper
2 garlic cloves, thinly sliced
2 bay leaves
2 thyme sprigs

IMG_9557 IMG_9559Combine all ingredients in a large zip-lock bag, and seal. Marinate in refrigerator 48 to 72 hours, turning bag occasionally.

IMG_9578 IMG_9581Strain okra marinade through a sieve over a bowl, discard marinade, bay leaves, and thyme sprigs.

IMG_9655 IMG_9649 IMG_9647*Okra why I didn’t like you when I was a I kid?!? And I found out okra has low calorie, very rich in dietary fiber. It is recommended for controlling cholesterol and weight. Rich in anti-oxidants, Vitamin A, K, C, B-6, B Complex, and folates…need I say more or just eat your “lady finger” or “gumbo”. With this recipe it’s not slimy but crunchy, spicy, and lemony. The kalamata adds a lot of flavor too. In conclusion I will be making  more of this in the future. enJOY!!!
