Farro with Andouille Sausage and Kale


3/4 package TJ’s 10 Minute Farro, boiled in broth
2 Andouille sausage,chopped
1 tablespoon butter
1 cup onion, diced
1 clove garlic, minced
1 1/2 cup mushrooms, chopped
2 cups kale, chopped
1-2 teaspoons red chilli flakes
salt and pepper to taste


IMG_9619 IMG_9613 IMG_9611 IMG_9625Set aside prepared farro. In a large skillet over high heat, cook the sausage until browned about 5 minutes. Remove sausage and set aside, keep sausage drippings. If pan is too dry, add butter and melt. Add onion, garlic, and kale; saute until tender, about 5-6 minutes. Add farro and sausage back to the skillet; add chilli flakes and season to taste with salt and pepper. Stir for about 2 minutes. Serve warm.

IMG_9628 IMG_9642*This is my first time trying farro. TJ’s made it easy cokked in 10 minutes. Farro is considered one of the oldest grain. It stimulates the immune system, lower cholesterol and help maintain blood sugar levels. The original recipe asked for sweet Italian sausage and apple. I kind of change it a bit, I added the two ingredients that is always in my pantry; Kale and mushrooms. enJOY!!!
