1 cup orzo, cooked
1-2 tomatoes, chopped
3 Persian cucumbers, chopped
1/4 cup onion, chopped
1/4 cup kalamata olives, chopped
1 cup crumbled feta cheese
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1/4 cup grapeseed oil or sunflower oil
salt and pepper to taste
In a small bowl, whisk lemon juice, white wine vinegar. Stream in the 1/4 cup of oil while whisking until a dressing forms, and season with salt and pepper.
Add to the rest of the ingredients.
*This very simple salad. This can be made in advance and by adding grilled chicken it is a complete meal already. I used feta cheese made with sheep’s milk. I find it creamier, it has less calories and fat. The real feta cheese is made with sheep’s milk or goat. In Europe you will never find feta cheese made with cow’s milk and if you do it is very rare. One of the best feta cheese I have tried is Bulgarian feta cheese beside the Greeks. enJOY!!!
