Tsatsa (Fried Whole Fish)

Ingredients:

1 pound fresh Smelt or frozen
salt and pepper
flour for dusting
canola oil for deep frying
IMG_0618Preheat oil to 350 degrees. Season smelt with salt and pepper.

IMG_0658Dust with flour. Deep fry in batches and be careful not to over crowd. Cook in 5-10 minutes or until golden brown. Best serve with lemon and a cold beer.
