Tomato, Cucumber, Purslane Salad with Feta

Ingredients:

1 large cucumber, peeled, quartered lengthwise, seeds removed and discarded, then chopped (from the CSA)
1 medium tomato, chopped (from the CSA)
1 bunch purslane, thick stems removed, leaves chopped, resulting in about 1/2 cup chopped purslane
1 minced seeded jalapeno chile pepper
2-3 tablespoons fresh squeezed lemon juice
*1 cup feta cheese
Salt to taste

I love getting veggies from CSA, you get to try different and unusual vegetables that you cant even find in a regular market. You know your parents always tell you “to eat your veggies”…they would be so proud of me now. enJOY!!!
